Green Goddess Crispy Tofu Bowl

  • 1/2 package extra firm tofu, cut into small cubes
  • 1 tbsp corn starch
  • Green Goddess dressing
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • 1-2 cups lettuce or greens
  • 1/4 cup fresh cilantro
  • 1 carrot, shaved
  • 1/2 avocado, sliced
  • Handful of cilantro
  • Lime juice

  1. Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Place the tofu cubes on a plate lined with paper towels. Place more paper towels on top and place a heavy object (like a skillet or a few heavy cans) on top of the tofu. Let it press for about 20-30 minutes.
  2. Cook the Rice: While the tofu is pressing, cook the rice according to package instructions. Set aside once done.
  3. Coat the Tofu: In a bowl, toss the pressed tofu cubes with 1 tablespoon of cornstarch until evenly coated.
  4. Fry the Tofu: Heat a thin layer of olive oil in a non-stick skillet over medium-high heat. Once hot, add the coated tofu cubes in a single layer. Cook for about 4-5 minutes on each side, or until crispy and golden brown. Remove from the skillet and place on a plate lined with paper towels to drain excess oil. Season lightly with salt and pepper.
  5. Assemble the Bowl: In serving bowls, arrange a bed of cooked rice and lettuce or mixed greens.
  6. Add Toppings: Top with the crispy tofu cubes, shaved carrot, avocado slices, and fresh cilantro leaves.
  7. Drizzle with Dressing: Drizzle with Green Goddess dressing.
  8. Finish and Serve: Finish with a squeeze of fresh lime juice over the bowl. Taste and adjust seasoning if needed. Enjoy!
