
This crispy tofu bowl is delicious, providing a combination of fats, carbs and protein – and veggies! You will need about half an hour of preparation before cooking to allow the tofu to drain into a paper towel. This, and coating it in a little cornstarch helps make it nice and crispy. Toss in your favorite sauce after frying, serve with rice, vegetables, and avocado, and drizzle with Green goddess dressing. Squeeze a little lime for that extra flavor.
This recipe gives you a balanced and flavorful meal with crispy tofu as the star, complemented by fresh veggies, aromatic cilantro, and creamy avocado, all tied together with the herbaceous notes of Green Goddess dressing.
- 1/2 package extra firm tofu, cut into small cubes
- 1 tbsp corn starch
- Green Goddess dressing
- 1 tbsp olive oil
- 1 cup cooked rice
- 1-2 cups lettuce or greens
- 1/4 cup fresh cilantro
- 1 carrot, shaved
- 1/2 avocado, sliced
- Handful of cilantro
- Lime juice
Instructions:
- Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Place the tofu cubes on a plate lined with paper towels. Place more paper towels on top and place a heavy object (like a skillet or a few heavy cans) on top of the tofu. Let it press for about 20-30 minutes.
- Cook the Rice: While the tofu is pressing, cook the rice according to package instructions. Set aside once done.
- Coat the Tofu: In a bowl, toss the pressed tofu cubes with 1 tablespoon of cornstarch until evenly coated.
- Fry the Tofu: Heat a thin layer of olive oil in a non-stick skillet over medium-high heat. Once hot, add the coated tofu cubes in a single layer. Cook for about 4-5 minutes on each side, or until crispy and golden brown. Remove from the skillet and place on a plate lined with paper towels to drain excess oil. Season lightly with salt and pepper.
- Assemble the Bowl: In serving bowls, arrange a bed of cooked rice and lettuce or mixed greens.
- Add Toppings: Top with the crispy tofu cubes, shaved carrot, avocado slices, and fresh cilantro leaves.
- Drizzle with Dressing: Drizzle with Green Goddess dressing.
- Finish and Serve: Finish with a squeeze of fresh lime juice over the bowl. Taste and adjust seasoning if needed. Enjoy!
