Crispy Air Fryer Zucchini

  • 4 zucchinis
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 tbsp olive oil
  • 1/2 tsp salt and pepper
  1. Wash and dry your zucchinis, then trim the ends off. On a cutting board, cut each zucchini in half and then lengthwise into 4 strips. If you would like thinner pieces for a more french-fry style, you may cut them into 6 pieces.
  2. Add your zucchini strips into a bowl and add olive oil, salt and pepper and toss together. Add Parmesan and bread crumbs and toss until each piece is evenly coated.
  3. Apply a piece of parchment paper to your air fryer, and place the zucchini inside with the skins facing down.
  4. Air fry for 10-12 minutes at 350 F until the zucchinis are crispy and golden. Eat them on their own or with your favorite dip. Enjoy!
