
A low-calorie and tasty treat. This recipe is quick and easy, combining just a few ingredients with fresh zucchini for a crunchy, healthy snack. I like to toss my zucchini with a dash of parmesan and breadcrumbs with simple seasoning. 10 minutes in the air fryer and voila!
If you don’t have an air fryer, you can absolutely make these in the oven as well! I like using an air fryer as it gives a nice crispy finish. If using an oven, bake for 10-12 minutes at 350 F.
Ingredients
- 4 zucchinis
- 1/4 cup grated Parmesan cheese
- 1/4 cup bread crumbs
- 2 tbsp olive oil
- 1/2 tsp salt and pepper
Instructions:
- Wash and dry your zucchinis, then trim the ends off. On a cutting board, cut each zucchini in half and then lengthwise into 4 strips. If you would like thinner pieces for a more french-fry style, you may cut them into 6 pieces.
- Add your zucchini strips into a bowl and add olive oil, salt and pepper and toss together. Add Parmesan and bread crumbs and toss until each piece is evenly coated.
- Apply a piece of parchment paper to your air fryer, and place the zucchini inside with the skins facing down.
- Air fry for 10-12 minutes at 350 F until the zucchinis are crispy and golden. Eat them on their own or with your favorite dip. Enjoy!
