Muffin Pan Mini Quiches



  • 4 eggs
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 3/4 cup shredded cheese of choice
  • 3/4 cup chopped bell pepper
  • salt and pepper to taste

    Crust
  • 1 and 1/2 cup all purpose flour
  • 1/2 cup butter, chilled and cut into small cubes
  • 1 egg
  • 2 Tbsp cold water
  • 1/2 tsp salt

  1. Mix egg and water, set aside.
  2. Combine flour, salt and butter. Using a mixer or clean hands, mix until mixture resembles a course meal.
  3. Slowly add in egg-water mixture until a smooth dough is formed.
  4. Transfer the dough to a floured surface and roll out until desired thickness. Cut out circles to fit into your muffin pans. Grease the pans and mold the small dough circles into the muffin pans for 12 quiches.
  5. Preheat the oven to 375 degrees F.
  6. In a large bowl, whisk together eggs, cream, milk, and salt and pepper. Pour the mixture evenly into each mold. Add peppers and cheese into each quiche.
  7. Bake for 30 minutes. Allow to chill and enjoy!
