Fresh Homemade Pesto


This is a great recipe if you’re growing some fresh basil in our garden – or are simply in the mood for tasty fresh pesto!

Ingredients

  • 2 cups fresh basil leaves
  • 1 cup fresh spinach
  • 1/2 cup Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 4 cloves minced garlic
  • 1/2 cup pine nuts
  • salt and pepper to taste

Instructions:

  1. Combine the basil and pine nuts in a food processor or blender until a finely chopped texture is created.
  2. Add garlic and cheese, scraping down the sides with a spatula as needed.
  3. Add olive oil, mixing in slowly one portion at a time to avoid the oil from separating. Place in a covered container or jar and refrigerate.
  4. Season with salt and pepper; serve with fresh bread or pasta. Enjoy!
